Learn the art of seafood butchery from Chef John and his experienced team at Meridian Restaurant & Bar —shake a locally caught Dungeness crab, shuck oysters or fillet the catch of the day and then settle in and savor your work while overlooking the expansive coastline. Mix-up seasonal cocktails with our resident mixologist –perhaps a classic Old Fashioned or a winter-inspired Tom & Jerry. Experience our specially curated four-course Northwest Chefs’ Tasting Menu that highlights our local purveyors. Awaken to the sound of crashing waves while you share our special Brunch Board on your private oceanfront balcony. Enjoy a seasonal cocktail and dessert in the privacy of your room while the sun sinks behind Haystack Rock. We look forward to sharing our special spot on the North Coast this winter.

DAY 1: WELCOME TO HEADLANDS
4:00 PM –Check-in and head out for a walk on the beach to explore the magnificent coastline under a crisp winter night.
9:00 PM – Retreat to your guest room and raise a toast to the beginning of your Coastal Reset Experience with seasonally crafted cocktails and dessert delivered to your room.
DAY 2: INDULGE IN COASTAL CUISINE
8:00 AM – Swing by the Adventure desk and pick up a self-guided hike itinerary for one of our many local trails.
11:00 AM – Settle into Meridian for your seafood butchery class with the culinary team. Learn the art of shucking oysters, a secret crab shaking technique, or perhaps the perfect fish filleting methods.
DAY 3: SHAKE IT UP
10:00 AM – Make your way to Tidepools Spa and enjoy expansive views of the coastline during your private hot tub session.
3:00 PM – Meet our resident mixologist at Meridian Bar for a fun afternoon of shaking, mixing, and tasting hand-crafted seasonal cocktails.
7:00 PM – Cozy up under the sky-high windows looking out over the Pacific Ocean for a four-course seasonally curated Northwest Chef’s Tasting Menu with Oregon wine pairings.
DAY 4: RETURN REFRESHED AND RECHARGED
9:00 AM – Awaken refreshed to crashing waves and enjoy your Northwest Brunch Board featuring a selection of cured meats, artisan cheese and chefs’ team specialties—paired with a choice of Meridian Bloody Mary or Mimosa
11:00 AM – Check-out and wander down for one last beach walk or pick up a cruiser bike for a ride along the miles of sandy beaches.
